. I've hunted squirrels and turkey in pecan orchards in the past but don't have a clue on how to set up or hunt for them.

Search "Dale" on this site. He's posted videos of hunts in a pecan grove. You can probably find them on Youtube as well. Busting Crows is what you want to search there.
Search "Bob Aronsohn" on Youtube and you'll get to see some excellent sets. They provide hours of entertainment during the off-season.
